If you love cilantro and lime… Cilantro Lime Chicken Tacos (crockpot style) - 1 lb. boneless skinless chicken breasts, juice from 2 limes, 1/2 cup of cilantro, 1 packet of taco seasoning, 1 teas. dried onions, 1/2 cup of water. Put all ingredients into crock-pot. Cook on low all day, or set crock-pot to high and cook for four(ish) hours. Shred, stir well. Spoon into soft taco tortillas.

Baked Cinnamon Bananas :) 1 Ripe Banana, peeled and sliced lengthwise Lemon Juice 2 tsp. Honey, and Ground Cinnamon Line toaster oven tray with nonstick aluminum foil.Lightly brush banana halves with lemon juice. Spoon honey over banana halves and sprinkle lightly with cinnamon. Bake for 10 minutes at 350. Remove from oven cut into 1-inch pieces. Can top with chocolate chips, fruit, etc. if you like.

Raspberry Vinaigrette Salad! it has bacon, apples, walnuts, and feta cheese. Cut down on the bacon (leave it out?) or sub turkey bacon. Use lower sugar/fat dressing.

Creamy Pineapple Dessert - great for summer! 1 lg can crushed or chunk pineapple with juice (use no sugar added), 1 lg box sugar free, fat freevanilla pudding mix and 8 oz cool whip. Mix together and chill.

Spaghetti with Spinach, Garlic, and Lemon. Adjusted the recipe to 3 servings. Absolutely delicious. I’ve made it 3 times and served to different ppl. Always a hit. Serve as main course, or pair with grilled chicken or shrimp or fish.
